Please note that each animal varies in size so these are approximate quantities of each cut on an average sized quarter beef.

Steaks

  • 6 Ribeye

  • 4 Filet Mignon (Tenderloins)

  • 6 NY Strip Steaks

  • 3-4 Sirloins

  • 2-3 Round Steaks

  • 1 Skirt Steak

  • 1 Flank Steak

Roasts

  • 2-3 Arm Roasts

  • 2-3 Chuck Roasts

  • 1-2 Rump Roasts

Other Cuts

  • 1 Brisket

  • 3-4 Short Ribs

  • 2-3 lbs Stew Meat

  • 30-35 lbs Ground Beef, 1 lb packages at 90/10
