Chorizo Smothered Burritos

Servings: 5 adults

Total cook time: 40 minutes


  • 1 lb HBK chorizo

  • 1/4 cup onion, chopped

  • 4 oz green chiles

  • 15 oz black beans drained and rinsed (or pinto beans)

  • 1/2 cup cheddar cheese

  • 6-8 tortillas (recommend the large or xl)

  • 20 oz enchilada sauce, red or green

  • 1 cup lettuce, shredded

  • Sour cream

  • Salsa

Let's get cooking!

  1. Preheat oven to 400 degrees. Line a 13x9 baking dish with foil or spray with non-stick cooking spray.

  2. In a skillet, brown the chorizo and onion together until cooked. Stir in black beans and green chiles until the mixture is warm. Stir in 1/2 cup of the cheddar cheese. Remove from heat.

  3. Add about 2/3 cup of the mixture into a tortilla, sprinkle with cheese and wrap like a burrito. Place in the baking dish, seam side down. Repeat with the remaining tortillas and mixture.

  4. Bake uncovered 20 minutes until the tortillas are crispy. Remove from the oven, pour enchilada sauce over the burritos and sprinkle the remaining cheese. Bake another 15 minutes.

  5. Enjoy with a side of rice and top your burritos with lettuce, sour cream, salsa, or green chiles!
